The Breakfast Sandwich Maker is one of my favorite appliances. I’m sure you’re thinking “she’s biased,” and of course I am to an extent, but I am being honest when I say I use the Breakfast Sandwich Maker multiple times a week (and have gifted them to family and friends. You’re welcome.) I’d also like to take a moment to shout out my Hamilton Beach single-serve blender as it also makes my breakfast world go round. Laurie is a home economist in the Consumer Test Kitchen. Laurie makes her breakfast sandwich with an Italian twist, incorporating basil pesto and mozzarella cheese. In the bottom ring she puts one half of a light, multigrain English muffin and tops it with a tablespoon of homemade pesto (yum) and a slice of fresh mozzarella cheese. She lowers the cooking plate and adds either one large egg or two egg whites and covers with the remaining English muffin half. Mary Beth is the group manager of corporate and consumer communications and feeds a crowd in the morning. So, she breaks out the Dual Breakfast Sandwich Maker to make two sandwiches at once and cut a little time. Mary Beth’s family is a fan of the classic breakfast sandwich, consisting of an English muffin, egg, cheddar cheese, and Canadian bacon. What makes these sandwiches great is the fresh (and we mean fresh) eggs that she uses. Mary Beth raises chickens so these sandwiches are coop-to-table, if you will. The fresher the ingredients the better, always.
Pat is the Consumer Test Kitchen manager and she is trying to cut out carbs, especially at breakfast. She makes a two egg omelet in her Breakfast Sandwich Maker. Instead of an English muffin half, put one scrambled egg in the bottom ring and top with crumbled bacon or breakfast sausage (or both), chopped bell peppers, and your favorite cheese. Bring down the cooking plate and pour in another scrambled egg. Set the timer for about 3-4 minutes. When the egg is cooked, slide the cooking plate out and the top egg drops, creating a fluffy omelette. This simple, low-carb breakfast option takes the “sandwich” out of the Breakfast Sandwich Maker.
Matt is the social media manager and was on a vegan/vegetarian kick a few years ago. Visit our author page on EverydayGoodThinking.com to find out whether or not Matt is still vegetarian (spoiler alert, he’s not) but he stands by this meatless breakfast sandwich and says it’s quite delicious. Put a sprouted grain or whole wheat English muffin in the bottom ring and top with vegan cheddar-style cheese, a slice of fresh tomato, and a few baby spinach leaves. Lower the cooking plate and layer veggie bacon and a slice of extra firm tofu. Top with the other English muffin half. If you have vegetarians in the family or are trying to eat less meat, this sandwich is a tasty option that nixes the meat but doesn’t skimp on flavor.
And that leaves with you my probably-too-sweet-for-7:30 in the morning breakfast sandwich. To say I have a sweet tooth is an understatement. While I love eggs, I chose sweet over savory most days. I love the combination of peanut butter, banana, and honey. I put a cinnamon raisin English muffin smeared with a little peanut butter (I’m in the extra crunchy camp) in the bottom ring. On the cooking plate, I put a few slices of bananas and a drizzle of my favorite Virginia honey. I top that with the other English muffin half smeared with even more peanut butter and cook it for 2-3 minutes until the bananas are warm. I’ve played around with using Nutella instead of peanut butter and trust me, you can’t go wrong. This sandwich works as a quick breakfast, afternoon snack, or dessert.
