It is easy to get caught in a food rut. We make the same things over and over again. But you can have variety without a lot of effort. Here are five of our favorite ways to make different but delicious chicken dishes in the slow cooker.
1 – Slow Cooker Creamy Chicken and Corn Chowder
It’s creamy, chunky, and topped with bacon. Does it take any more convincing? This chicken and corn chowder is great for a weeknight meal or when entertaining on game night.
2 – Slow Cooker Chicken Cacciatore
Pasta is always my go to dish, and this hearty dish is definitely a great cold weather meal. Toss the ingredients in the slow cooker in the morning and come home to a hot, delicious meal with tender veggies and chicken cooked to perfection. Serve over spaghetti for the ultimate Italian meal.
3 – Slow Cooker Chicken Enchiladas
Enjoy a mid-week fiesta with this cheesy chicken recipe. Flavorful and slightly spicy, this Mexican slow cooker dish is easy to pair with rice, refried beans or your favorite chips and salsa.
4 – Slow Cooker Tuscan Chicken Stew
If you’re looking for a hearty bowl of comfort, this is it. Chicken and sausage simmer in a chicken broth blended with garlic, carrots, onions and celery to create a flavorful base for superfoods kale and beans. Served with crusty bread, it’s a meal in itself.
5 – Slow Cooker Chicken Pot Roast
Our cold weather cooking philosophy is to find comfort and warmth in the foods you eat. Beef pot roast falls into this line of thinking but we challenge you to try this traditional meal with a twist. Use chicken instead of beef. It’s tender, succulent and downright comforting.
