      Breakfast Sandwich Maker Huevos Rancheros

      Instead of your bread of choice, you’ll need mini tortillas (they fit perfectly in the bottom ring). Preheat the Breakfast Sandwich Maker then lift the cover and top ring. Place the mini tortilla on the bottom cooking plate and top with refried beans and cheese. Lower the cooking plate and the top ring. Add a lightly scrambled egg and top it with onion, bell pepper, salt, and pepper. Close the cover and cook for 3 to 4 minutes.

      When the egg is finished cooking, slide the cooking plate out and let it fall onto the tortilla, beans, and cheese.

      Top your mini huevos rancheros with salsa, cilantro, and sliced avocado (maybe even a dash of hot sauce to help wake you up). Feeding the family?       Ingredients

      • 1 mini corn tortilla
      • 1 tablespoon refried beans
      • ¼ cup shredded cheddar cheese
      • 1 large egg, lightly scrambled
      • 2 teaspoons chopped onion
      • 1 teaspoon chopped red pepper
      • Salt and pepper to taste
      • 2 teaspoons salsa
      • Chopped cilantro

      Instructions

      1. Preheat Breakfast Sandwich Maker until green PREHEAT light comes on. Lift cover, top ring, cooking plate and bottom ring.
      2. Place the tortilla on bottom cooking plate. Top tortilla with refried beans and cheese.
      3. Lower cooking plate and top ring. Add egg. Top with onion and red pepper. Salt and pepper to taste.
      4. Close cover. Cook 3 to 4 minutes. Slide out cooking plate by rotating handle clockwise. Lift cover and rings; carefully remove tortilla and egg with plastic spatula.
      5. Top with salsa and cilantro.
