Center Stage: Collard Crush Green Juice with Eating Bird Food

The holidays are over, 2015 is here and you’re looking to get healthy, boost your energy and feel amazing… sound about right?

The one thing I always tell my health coaching clients is that you don’t have to overhaul everything in your life at once. In fact, doing so is usually a bad idea because most people dive in full-force, then get burnt out and end up going back to old ways in just a few short months.

At the end of the day it’s about making small, manageable changes. These changes may not seem like much, but implemented over time, they really add up and can make a huge difference in your health. A couple ideas include riding your bike to work instead of driving, toting around a water bottle so you stay hydrated throughout the day or swapping your morning cup of joe for a nutrient-packed green juice — like the one I’m sharing today.

Why collard greens? Kale is the superstar of dark leafy greens, but collards are packed with nutrients, vitamins and minerals as well and they tend to produce more juice than kale. Load up your juicer with a few collard leaves for a healthy dose of carotenoids, Vitamin K, Vitamin C, Vitamin E, folate and manganese.

This particular combo combines all of my favorite green juice components — apples, cucumber, grapefruit, ginger and lemon — along with the collard greens. The mixture has a vibrant green color, a sweetness from the apple and grapefruit and a tiny kick from the fresh ginger. One glass and you’ll feel energized and ready to take on the day!

Collard Crush Green Juice

Yield: Serves 1

Ingredients

  • 4 large collard leaves
  • 2 green apples
  • 1 inch knob of fresh ginger, peeled
  • 1 cucumber, peeled
  • 1 grapefruit, peel and pith removed
  • 1 lemon, peel and pith removed

Instructions

  1. Cut the apples and cucumber as needed to fit through the chute of the juicer.
  2. Juice the ingredients in the order listed.
  3. Stir and serve immediately.
