Slow Cooker Beef Roast with Vegetables
We use bottom round roast and whole baby red potatoes for a sliceable roast perfect for a “meat and potatoes” meal. Test kitchen tip: if you have a stovetop safe slow cooker, try browning the meat and sautéing the onions and garlic in the crock before adding the rest of the ingredients, and then let it slow cook for 8 hours on low.
To make this dish, simply pick a seasonal pumpkin beer and toss it in the crock with sweet potatoes, onions and a beef roast. The combination of pumpkin pie spice and pumpkin beer will add tons of fall flavor to your meal.

1 3-4 lb chuck roast
1. Envelope ranch dressing
1. Envelope au jus mix
1. Stick butter
5-7 pepperoncini peppers
Put roast in slow cooker, cover with ranch and au jus mix. Place stick of butter on top, surround with peppers. Cook on low for 7-8 hours.
Serve with mashed potatoes or another starch. Drippings make awesome gravy!
