      Slow Cooker Beef Stroganoff

      Beef stroganoff is a go-to cold weather meal in my house. Pasta, beef, and mushrooms covered in a creamy sauce - what could be better on a blustery day?

      Here at Hamilton Beach, we love adapting comfort food recipes for the slow cooker. From chicken and dumplings to hearty chowder, making slow cooker comfort food is second nature in the Test Kitchen.

      Slow Cooker Beef Stroganoff

      While many dishes are delicious when made on the stovetop or baked in the oven, what you if you let your favorite comfort food classics cook all day in the slow cooker? And have them ready and waiting for you when you walk in the door? Even better, right? Right.  

      This beef stroganoff recipe is adapted for the slow cooker and of course, it worked like a charm.

      Slow Cooker Beef Stroganoff

      Add boneless beef round strips (covered in flour), mushrooms, onion, garlic, cream of mushroom soup, beef broth, Worcestershire sauce, and spices to the slow cooker crock. Cook on HIGH for 3 ½ to 4 hours or on LOW for 6 ½ to 7 hours.

      Before serving, stir in a mixture of cornstarch and water, and cook with the lid off or another 30 minutes. The mixture acts as a thickening agent - leaving you with a nice, thick sauce. Finally, stir in sour cream for some extra creaminess and tang and you’re ready to eat.

      Thanks to the slow cooker, when you walk in the door after a chilly day, a comforting meal is cooked and ready to eat. All that’s left to do is pull on your coziest sweatshirt, fuzzy socks, and serve.

      This beef stroganoff is delicious over egg noodles or your favorite pasta. Taking your stroganoff to-go? Add the noodles right to the crock and use it as a serving dish at a neighborhood potluck, fall festival, or Halloween party.

      Slow Cooker Beef Stroganoff

      • ¼ cup all-purpose flour
      • 2 1/2 pounds boneless beef round, cut into thin strips
      • 2 packages (8 ounces each) sliced baby bella mushrooms
      • 1 large sweet onion, chopped
      • 2 cloves garlic, minced
      • 1 can (22.6 ounces) condensed cream of mushroom soup, undiluted
      • 1 cup beef broth
      • 2 tablespoons Worcestershire sauce
      • 1 teaspoon ground paprika
      • 1 teaspoon salt
      • ½ teaspoon coarse black pepper
      • ¼ cup cornstarch
      • ¼ cup cold water
      • 1 cup sour cream
      • Cooked egg noodles


      1. Place flour in a large resealable plastic bag. Add beef to the bag and shake until evenly coated. Transfer coated beef to slow cooker crock.
      2. Add mushrooms, onions, garlic, soup, broth, Worcestershire sauce, paprika, salt and black pepper to crock. Stir until well blended.
      3. Cover slow cooker and cook on HIGH for 3 ½ to 4 hours or LOW for 6 ½ to 7 hours.
      4. In a medium bowl, stir cornstarch and water until cornstarch is dissolved.
      5. Add cornstarch mixture to beef mixture, stir until mixture thickens. Cook uncovered for 30 minutes.
      6. Stir in sour cream. Serve over egg noodles.
