      Peach Ricotta Toast

      While I can’t deny a savory piece of toast (avocado toast with a sunny side up egg is my absolute favorite), don’t ignore your sweet tooth when brainstorming your next creation. The next time you stop at the grocery store or fruit stand to find the most perfect peaches, pick up a few extras so you can make this peach and ricotta toast.

      Peach Ricotta Toast

      Toast four thick slices of whole-grain bread (you could definitely switch things up and use cinnamon raisin or sourdough for more flavor) in your Hamilton Beach® toaster.       Slather a mixture of ricotta cheese, confectioner’s sugar, and lemon juice on top of your toast. Then top with peaches soaked in brown sugar, rum, and salt. Sprinkle your toast with a little bit of fresh mint and you’re ready to serve.

      This toast recipe perfectly showcases our favorite summer stonefruit. The slightly sweet ricotta and rum-soaked peaches are the perfect topping for the crispy, crunchy toast. When you have plenty of ripe peaches in your kitchen begging to be used, skip the cobbler and have a handheld bite to eat.

      • ½ cup whole milk ricotta cheese
      • 1 tablespoon confectioners’ sugar
      • 2 teaspoons lemon juice
      • ¼ cup packed light brown sugar
      • 1 tablespoon butter, melted
      • 1 teaspoon spiced rum (optional)
      • Dash of salt
      • 2 ripe peaches, pitted and thinly sliced
      • 4 thick slices whole-grain bread
      • 1 tablespoon finely chopped fresh mint


      1. In a small bowl, combine ricotta cheese, confectioners’ sugar and lemon juice. Set aside.
      2. In a medium bowl, combine brown sugar, butter, rum and salt. Add peach slices and toss to coat. Set aside.
      3. Toast bread.
      4. Spread about 2 tablespoons ricotta mixture on each slice of toast. Top with peach slices and sprinkle with mint.
