It’s that time of year again – Mother’s Day has come and gone and it’s time to celebrate dear ol’ dad. We cooked a multi-course brunch for mom but we’re going a different route for dad this weekend – a Guinness ice cream float.
If your dad is anything like mine, he has quite the sweet tooth. This year I wanted to combine a few of his favorite things into one dessert for his special day.
These Father’s Day floats aren’t your average ice cream float. Instead of pouring root beer (or another one of dad’s favorite sodas) over the ice cream, we poured a smooth, dark stout (in this case, Guinness) over vanilla ice cream. Dad should like that, right?
The beer float foams just like a soda would, and mixes with the melted ice cream to create an adult beverage-dessert combo that is perfect for a beer-loving, chocolate-loving man of the house. Want to make it extra special? Make homemade ice cream (dad’s favorite flavor, of course) the day before to use in the floats.
Top these floats with a little (more than a little) extra chocolate syrup, hand dad a straw, and he’s sure to feel the love on Father’s Day.

- Follow ice cream maker directions to prepare Easy Vanilla Ice Cream.
- Place 2 to 3 scoops of ice cream in a large glass. Pour stout beer over ice cream.
- Drizzle with chocolate syrup.
