The next time you stop at the grocery store or fruit stand to find the most perfect peaches, pick up a few extras so you can make this peach and ricotta toast.
Toast four thick slices of whole-grain bread (you could definitely switch things up and use cinnamon raisin or sourdough for more flavor) in your Hamilton Beach® toaster. - In a small bowl, combine ricotta cheese, confectioners’ sugar and lemon juice. Set aside.
- In a medium bowl, combine brown sugar, butter, rum and salt. Add peach slices and toss to coat. Set aside.
- Toast bread.
- Spread about 2 tablespoons ricotta mixture on each slice of toast. Top with peach slices and sprinkle with mint.
