Cinco de Mayo Tomatillo Salsa

It’s that time of year again, so break out the cervezas. It’s Cinco de Mayo! Hopefully, the weather is great where you live, and you’re going to spend the evening with friends and family, a tasty margarita, and some chips and salsa. We’ll be enjoying this bright green salsa made with fresh tomatillos and lime. There’s a big kick from the jalapeño, so have your drink nearby. This spicy salsa fresca is ready to party.

Tomatillo Salsa

Yield: Serves 8

  • 4 medium tomatillos, husked and quartered
  • 1 small onion, quartered
  • 1 small jalapeño, halved
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 3 sprigs cilantro


  1. Place ingredients in order listed in blender.
  2. Process on HIGH until blended.
  3. Garnish with additional cilantro and serve as a sauce or with tortilla chips.
